Ingredients:
1.25 lb. salmon, cubed
1/4 cup soy sauce
2 cloves garlic, crushed
2 tbsp honey
1 tbsp sesame oil
2 cups broccoli florets
1 cup rice
2 cups water
1/4 tsp salt
2 tbsp peanut butter
2 tbsp mirin
1 tbsp grated fresh ginger
Optional garnishes: toasted sesame seeds, sliced green onions

Instructions:

Marinate salmon in a mix of soy sauce, crushed garlic, honey, and sesame oil.

Heat oil in a pan. Add the salmon and the marinade sauce.

Combine peanut butter, mirin, ginger, and soy sauce to make the sauce.

Add ginger sauce to salmon.

Assemble bowls with rice, salmon, broccoli, and sauce.

Garnish with sesame seeds and green onions.
